Set on the edge of Bodmin Moor within the granite walls of an eighteenth century prison built in 1779, Bodmin Jail Hotel is the most improbable luxury conversion in Britain, reopened in 2021 after a £70 million restoration of a building that held inmates until 1927 and stored the Crown Jewels during the First World War. Each of the 70 rooms is formed from three original cells knocked into one, heavy iron doors and barred windows intact, original stone walls still carrying genuine prisoner graffiti, now paired with underfloor heating, deep beds and serious bathrooms. Dining sits in the former chapel, where The Chapel restaurant serves refined Cornish cooking beneath soaring gothic ceilings, with a Champagne bar for before and the Jolly Hangman's Tavern for something looser. The Nici Newquay
The Nici opened in June 2026 inside the Victorian gothic landmark that spent 125 years as the Hotel Victoria, reborn by the group behind Bournemouth's acclaimed original as a slice of the Italian Riviera on the Atlantic. The 82 rooms carry the Nici signature of sun washed colour and playful glamour, while the restored Victorian bathing lift, a rarity in Britain, carries guests straight down the cliff face to the sand below. Set into the cliffside above Mawgan Porth, the coveted stretch of coast between Newquay and Padstow, Bedruthan has been quietly perfecting the art of the Cornish escape since 1959, a family owned outpost of Scandi design and Californian architecture facing straight out over the Atlantic. Boskerris Hotel
The full sweep of St Ives Bay from Godrevy Lighthouse to the rooftops of the town itself, Boskerris is a family run boutique hotel that has been welcoming guests since the 1930s and quietly become one of the county's most loved small stays. The 15 rooms are individually designed in a relaxed Mediterranean style, light, white and calm, most facing the ocean, with White Company toiletries and the kind of personal touches only a hotel this size can manage. The day revolves around the terrace, breakfast, afternoon tea and sunset drinks all taken looking across the water, with a restaurant built on locally sourced Cornish produce and a bar stocked with the county's gins and beers. Set at the heart of Watergate Bay Hotel with the Atlantic horizon filling the windows, Zacry's is the serious end of the hotel's dining, a candlelit evening restaurant where the day on the beach gives way to a proper dinner. The seasonal three course menu is built on what Cornwall's seas, fields and market gardens are producing right now, generous cooking with an American accent that suits the surf side setting, served from half past five so the sunset does half the work. The room pairs naturally with Swim Club, and the smart move is to book the two together, an evening swim in the infinity pool and hot tub before walking straight through to the table. Set above one of Britain's most beautiful white sand beaches on the Carbis Bay Estate outside St Ives, MOR opened in summer 2026 as the Cornish debut of Tom Sellers, the chef who earned a Michelin star at Restaurant Story within five months of opening it at 26 and a second in 2021. The name is the Cornish word for sea and the restaurant is built entirely around it, a raw bar and charcoal grill anchoring a menu of hand dived scallops, day boat fish, ex dairy beef and vegetables from the kitchen garden on the estate, in dishes like Cornish crab with steamed milk buns and clotted cream soft serve with salted caramel and horseradish. The room, by designer Shayne Brady, blends natural stone, wood and sheer fabric in a meeting of Japanese Shintoism and Cornish mysticism, with the turquoise bay doing the rest. For the most exciting new table in the county.

Set inside the grand Victorian Headland Hotel on the cliffs above Fistral Beach, Ugly Butterfly is Adam Handling's love letter to Cornwall, a zero waste fine dining room that relocated from Carbis Bay in 2025 and collected its first Michelin star within seven months of reopening. The philosophy is sustainability without sacrifice, nearly everything sourced within the county's borders and nothing wasted, delivered through a flexible menu format alongside a full tasting experience, in dishes like wild bass with courgette and bone sauce or local lobster paired with wagyu.
